Paxie’s Favorite Chocolate Chip Cookies

Around 2001, my paternal grandfather and his wife gifted me a cook book for Christmas; 1001 Cookie Recipes by Gregg R, Gillespie. The book is falling apart at this point, despite the fact I mostly use just one recipe in it, Chocolate Chip Cookies I.
I was drawn to this recipe because of how easy it was to customize; it calls for instant vanilla pudding mix and right away, I started combining different pudding mix flavors with different mix-ins. With one recipe, I had endless cookie possibilities. I recently made this recipe on my twitch channel and promised to share the recipe on this blow, so here we go!
Ingredients:
1 cup butter
¾ cup brown sugar
¼ cup granulated sugar
2 large eggs
1ish tsps Vanilla
2 ¼ cups all-purpose flour
1 tsp baking soda
1 3.4oz package of vanilla pudding mix
½ tsp salt, only if using unsalted butter
1 bag (about 2 cups) chocolate chips
Directions:
Preheat oven to 375 degrees Fahrenheit; spray cookie sheets with cooking spray or line with parchment paper.
In a medium bowl, mix together dry ingredients, including pudding mix. Set aside
In a large bowl, beat the devil out of the butter; add the sugars and cream together. Beat in eggs and vanilla. Slowly add in the dry ingredients (or go as fast as possible if you want an absolute mess), mixing until just combined. Stir in chocolate chips
Using a tablespoon, or a cookie scoop if you have one, drop cookie dough onto prepared baking sheet. Bake for 8-10 minutes, or until golden brown. Allow to cool on the banking sheet for a minute or two before moving to cooling racks. Amount of cookies made depends on how big you make them and how much raw dough you eat; using a tablespoon, I was able to get 2 dozen
Store cookies in an air tight container with a slice of bread to keep them soft. Or don’t, I’m not the boss of you.
Notes:
You can honestly use any flavor pudding/chocolate chip combination you want and it’ll be amazing. Some of my favorite combinations include:
Chocolate pudding, mint chocolate chip
Strawberry pudding, cream cheese flavored chips
Butterscotch pudding, white chocolate chips
Pumpkin Pie pudding, cinnamon flavored chips
I don’t like nuts in my cookies, but if desired you can use ½ cup less chocolate chips and add in ½ cup nuts.
